Don Teó - Honeyed
Last year Sweet Bloom had the privilege of sharing the same coffee processed three different ways from Don Teó’s farm, Finca Las Marías, and they are proud to be able to do it again this year!
For the honeyed lot, the cherry was harvested, the skin removed, and the thin layer of fruit was left on the seed during the drying process. The results of leaving the fruit on the seed while drying can be pretty fantastic if done right. And for sure, Teo got it right again! The honeyed lot hints towards a riper, more intensely fruited cup. You’ll find the apple-like notes found in the washed version of this coffee are more like champagne in the honeyed. You’ll also find lovely notes of lychee and guava mingling nicely with a deep sugarcane sweetness . If you like coffees that are super sweet, and lightly fruit forward, then this honeyed selection will not disappoint!
